1638 Restaurant & Wine Bar Helmed by Three-Starred Michelin Chef Nacho Manzano Debuts at Tivoli Kopke Porto Gaia Hotel in Portugal
Porto, April 14, 2025 – Tivoli Kopke Porto Gaia, Porto’s newly opened luxury hotel, is thrilled to announce the highly anticipated opening of 1638 Restaurant & Wine Bar by Nacho Manzano, the three-starred Michelin chef of northern Spain’s acclaimed Casa Marcial in Asturias. The fine-dining restaurant’s unique tasting- menu-only concept takes guests on a blind multi-course celebration of the Portuguese coast and Chef Manzano’s Asturian culinary heritage, paired with exquisite wines from the Douro region. The restaurant gets its moniker from the founding year (1638) of Kopke, Portugal’s oldest Port winery.
The evolving tasting menu is a sensory journey of flavors, textures, fragrances, contrasts and emotions, highlighting the essence of each locally-sourced ingredient and elevating it to a new level. During the blind tasting, the menu is unveiled moment by moment, as Manzano’s Iberian haute cuisine takes center stage under the subtle illumination of the dining room. Guests will enjoy panoramic views of Porto, which pair perfectly with classic, serene ambiance and exceptional service.
"The richness and qualities of the cuisine from Northern Portugal and Spain, similar in so many aspects, are seamlessly integrated into the offerings of the 1638 Restaurant & Wine Bar,” says Nacho Manzano, Chef of 1638 Restaurant & Wine Bar. “This fusion creates a unique synergy, elevating the flavors of premium ingredients to an exceptional level of excellence, blending nostalgia, tradition, and modernity. The Iberian gastronomic heritage is complemented by the distinctive Kopke wine pairing, meticulously crafted to enhance each dish, making the experience both surprising and memorable.”
This culinary experience is $154/person and can be further elevated with two wine pairing offers—the Gastronomic Wine supplement, which features wines paired to each course ($88/person), or the Essential Wine pairing, which includes four wines ($50/person). Wines hail from the Douro region and feature Kopke Port wines, as well as Douro DOC still wines from Quinta de São Luiz and Quinta da Boavista. Guests can also add on exclusive vintages, including the Kopke 30-Year Tawny Port.
1638 Restaurant & Wine Bar by Nacho Manzano aims to enrich the Northern Portugal region by inviting the local community and travelers alike to experience the vibrancy of Porto while being transported to the rural childhood memories of Chef Nacho Manzano. It reflects an Iberian bond, uniting the Portuguese coast with the Asturian mountains and celebrating flavors that journey from the sea to the mountain ranges and to the pastures of the interior.

Born in 1971 in La Salgar, Asturias, Nacho Manzano began his culinary journey in his family's restaurant, developing a deep connection with the flavors and traditions of his homeland. In 1993, together with his sisters Esther and Sandra Manzano, he transformed Casa Marcial, once a simple local eatery, into one of Spain's most acclaimed restaurants. The first recognition came in 1999 with the first Michelin star, followed by the second in 2009. In 2024, he achieved his third star, solidifying his status as an international reference. Over the years, Nacho and his family have expanded their ventures with Gloria in Oviedo and Gijón, the Narbasu Restaurant and Hotel (1 Green Michelin Star), the NM Restaurant (1 Michelin Star), and Manzano Catering.
Nacho Manzano's cuisine is a tribute to the land, with dishes that highlight local ingredients: his vision extends beyond the product to include a sustainable and environmentally friendly approach. Manzano actively collaborates with regional producers, enhancing the short supply chain and promoting the Asturias region. This dedication earned him the Green Star. Manzano's efforts have also garnered several awards, including the National Gastronomy Award for Best Chef in 2021.
