Ten Awarded Chefs, With a Total of 11 Michelin Stars, Create Exclusive Breakfast Dishes to Celebrate the 10th Anniversary of NH Collection Hotels & Resorts
The "Signature Breakfast Constellation Edition" highlights local produce through distinctive dishes crafted by renowned chefs at select properties across Europe and Latin America
Madrid, April 2, 2025 – Throughout 2025, NH Collection Hotels & Resorts, part of Minor Hotels, will celebrate its 10th anniversary. To mark this milestone, the brand has partnered with 10 renowned Michelin-starred chefs at 10 of its hotels worldwide to create the Signature Breakfast Constellation Edition, a culinary initiative that highlights one of the brand’s core pillars: gastronomy.
The 10 participating hotels are located in cities across Europe and Latin America, with each chef creating a dish accompanied by an expertly paired drink that showcases the local produce of the hotel’s destination. These made-to-order breakfast dishes will be available at the participating hotels through October 2025.
The chefs behind the breakfast recipes collectively hold 11 Michelin stars. Each dish emphasizes high-quality local produce, with some chefs opting for classic preparations and others taking a more innovative approach — always with a focus on offering healthy options.
Three of the participating hotels are located in Spain. In A Coruña, chef Javier Olleros, who holds 2 Michelin stars at Culler de Pau (O Grove, Pontevedra), has created a dish for NH Collection A Coruña Finisterre. In Madrid, guests at NH Collection Madrid Palacio de Tepa can enjoy a unique dish by chef Paco Roncero, who holds 2 Michelin stars at his namesake restaurant, located within the iconic NH Collection Real Casino de Madrid, a property operated by Minor Hotels. Rounding out the list in Spain, NH Collection Cáceres Palacio de Oquendo will offer a dish by Alejandro Hernández Talavante (Versátil restaurant, 1 Michelin star).
Five other participating chefs are among Europe's most renowned culinary talents, including Nicolai Nørregaard (restaurant Kadeau, 2 Michelin stars, Copenhagen, Denmark), Yuri Wiesen (restaurant Wiesen, one Michelin star, Eindhoven, The Netherlands), Mikael von Lüders (restaurant Finnjävel, 1 Michelin star, Helsinki, Finland), Iside de Cesare (La Parolina, 1 Michelin star, Trevinano, Italy), and Ciro Scamardella (Pipero, 1 Michelin star, Rome, Italy).
The list is rounded out by two acclaimed chefs from Latin America: Luciano García, celebrated for his distinguished career as a pastry chef and now the owner of García in Buenos Aires; and Mikel Alonso of Biko in Mexico.
For breakfast at NH Collection A Coruña Finisterre, chef Javier Olleros has crafted a dish centered around Galician eggs and cheeses: house egg with breadcrumbs and smoked cheese cream. At NH Collection Madrid Palacio de Tepa, chef Paco Roncero presents oil bread toast with cucumber, miso yogurt, Parmesan, and extra-virgin olive oil pearls. Meanwhile, Alejandro Hernández'screation for NH Collection Cáceres Palacio de Oquendo features a slow-cooked free-range egg, codillo confit, concentrated Iberian ham juice, Presta jelly and crunchy breadcrumbs.
At NH Collection Roma Cinquecento, chef Ciro Scamardella also spotlights the egg with his dish, Egg 65°C, featuring pecorino cheese foam, morone fish loin on a bread waffle, and a mixed salad with chia seed citronette. In Milan, chef Iside de Cesare has crafted a dish for NH Collection Milano CityLife: foam egg white with crispy yolk, broccoli cream, guanciale, and toasted brioche bread.
Meanwhile, in the Netherlands, Finland and Denmark, the spotlight is shared between local fish, such as salmon, and other regional specialties, including honey and seasonal fruits. For NH Collection Copenhagen, chef Nicolai Nørregaard's presents a dish that perfectly embodies his commitment to local ingredients, a value also championed by NH Collection Hotels & Resort. His creation features cold-smoked Bornholm salmon toast with Kadeau preserves. The toast is fried sourdough with elderflower butter, topped with egg yolk, honey and plum glaze, preserved elderflower, lightly whipped crème fraiche, and horseradish, a tribute to the tradition of Bornholm smokehouses.
At NH Collection Helsinki Grand Hansa, chef Mikael von Lüders pays homage to Finnish identity with his Röpörieska, a Finnish barley and buttermilk flatbread served with cold-smoked salmon and a poached egg cooked at 147°F.
In the Netherlands, chef Yuri Wiesen offers minute-smoked Scottish salmon on brioche toast, accompanied by a quail egg, watercress, and hollandaise sauce, alongside a glass of NH Collection 10th Anniversary Cava at NH Collection Eindhoven Centre.
Shifting to Latin America, the recipes take on entirely new ingredients and concepts. In Mexico, the focus is on pork in Mikel Alonso's creation for NH Collection Mexico City Reforma: truffled pig's trotters, poached egg, Iberian cream, and smoked foam, accompanied by crispy grilled bread. Meanwhile, in Buenos Aires, Luciano García presents crispy potato rösti with smoked aubergine cream, cured zucchini, roasted beetroot, smoked trout, poached egg, glazed carrots, fresh olive tomatoes, and librito de grasa for NH Collection Buenos Aires Crillón.
